“From crisis comes new cuisines,” as Jaime Wheelock Roman says in his book. It is somehow true as people nowadays love to recreate or relive centuries-old recipes.

Amid the lockdown, a particular kitchen believes that the pandemic brings either the worst or the best in people, and it is up to us how we want to spend our time. So, they chose to create hot, spicy, and savory dishes, hoping to ignite a raging fire in your bellies while staying safe at your homes.
The Story Behind The Villamaria Kitchen
A mixed martial arts champion and a jiujitsu black belter and teacher, Froilan Sarenas II is the man behind The Villamaria Kitchen’s fiery, savory dishes.

Initially based in Singapore, Sarenas went to the Philippines to marry his wife a few days before the lockdown. Currently staying with his new family amid the pandemic in the Philippines, he discovered a new passion—not in the arena, but the kitchen—as he begins to cook Szechuan-style spicy stir-fry Ma La, which he learned in Singapore. Ma La is a spicy mix of vegetables and meats in scorching Sichuan seasonings.

After his frequent visits to Chinatown and several hawkers in the metro, Sarenas decided to open his own food business, trying to conquer an unfamiliar battlefield. He named it The Villamaria Kitchen after his wife and their home.
Fiery Dishes and Dips Cooked by A Strongman
Sarenas’ roster of fiery dishes includes variants of Sichuan-style Spicy Stir-fry Ma La, Spicy Ma La Hot Pot, and Spicy Ma La Pata. Among these three, the Spicy Stir-fry Ma La platter is the crowd favorite as each serving comes with your choice of viand, vegetables, and street food balls. You can also choose your preferred meat from either chicken, pork, beef, or seafood, and can customize it according to your taste.

If you’re looking for something that will spice up your meals more, Sarenas also whips up pungent bottled sauces, fermented products, and dips like Garlic Labuyo Oil, and Sardines and Garlic in Olive Oil. He will also soon be launching his Singaporean-style salted egg dishes.
