Sisig is a Filipino dish made with fried, chopped parts of a pig’s head and a chicken’s liver, seasoned with calamansi, onions, and chili peppers, and mixed with egg and, for some, mayonnaise. As time passes by, this dish becomes a perfect meal eaten as a viand or as a pulutan. New versions of the sauce have since then popped out here and there.
